FDST 2306 Advanced Food Technology

This course moves beyond entry-level tasks to advanced food technology and strategic food defense. The Advanced Food Technology (AFT) course provides active-duty Veterinary Food with the advanced knowledge and practical skills necessary to ensure food safety, quality, and defense in military and civilian operational environments. By deepening their understanding of modern food processing, preservation, packaging, and Hazard Analysis and Critical Control Point (HACCP) systems, this course prepares inspectors to identify and mitigate food-related risks across the supply chain. This directly contributes to Army Readiness by protecting the health of soldiers and civilians, ensuring operational continuity, and supporting the Army's mission to safeguard the food supply under all conditions. Upon completion of the course, graduates will be more proficient in protecting the force from foodborne illnesses and able to contribute fully to the theater and command operations.
